My lockdown baking continues.
Running low on bread, yesterday afternoon. I couldn't be bothered making bread and the whole proving business, so made some Parmesan and Pesto Muffins to go with our salad at tea time.
I have to say they turned out really well. It was all a bit hit and miss, but I will definitely make them again, maybe add a bit of mustard powder or some crispy bacon in the mix?
I'm going to freeze the remaining muffins. I thought they'd be nice with home made soup too.
